Ingredients for 3 servings:

  • 1 small head of cauliflower
  • 4 carrots
  • 200 g spelt, whole grains
  • 600 ml water
  • 200 ml coconut milk
  • 200 ml water
  • some salt (lemon)
  • some parsley, chopped

Instructions

Working time approx. 30 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 45 minutes; Total time approx. 13 hours 15 minutes

Stew with carrots, coconut milk, and spelt. If you like, you can also serve the spelt as a side dish.

Soak the spelt overnight in 600 ml of water and cook it the next day. This takes about 45 minutes. Cook the cauliflower whole in the steamer, adding the peeled and diced carrots to the side of the steamer. Cooking time: about 20-25 minutes. Remove the cauliflower from the steamer and place it in a pot, ideally chopping it up a bit. Add 200 ml of water, the coconut milk, and the lemon salt, and chop using a hand blender. Add the cooked spelt and carrots and return to the heat. Garnish the plates or bowls with the parsley.
