Ingredients for 1 servings:
- 2 large bananas, ripe
- 1 large carrot(s)
- 280 g spelt flour, type 1050
- 2 m.-sized eggs
- 100 g butter, soft
- 150 g ground almonds
- 1 pack of baking soda
- 1 packet of baking powder
- 100 g sugar
- 50 ml maple syrup
- 1 pinch of sea salt
- 1 shot of milk
- Fat, for the shape
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes
Banana and carrot cake
Whisk together the sugar, maple syrup, and butter with the mashed bananas and grated carrot until fluffy. Alternately add the milk, flour, and eggs and mix. Then stir in the baking soda, baking powder, salt, and almonds. Pour the batter into a greased springform pan and bake in a preheated oven at 180°C (350°F) for about 60 minutes on the middle rack without fan.
