Ingredients for 1 servings:

  • 80 g green spelt
  • 200 ml water
  • some herbal salt
  • 200 g tomatoes, mixed yellow and red
  • 1 bunch of chives
  • 2 tbsp vinegar (fruit vinegar)
  • 1 pinch(s) of sugar
  • herbal salt
  • Pepper, freshly ground
  • chili flakes
  • 1 tbsp extra virgin olive oil

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 45 minutes

with tomatoes and chives, really filling

Soak the green spelt in water for about 1 hour, then boil with the herb salt for about 20 minutes. Remove from heat and let it swell. This can also be done the day before. Remove the stems from the tomatoes and cut into small cubes. Halve the cherry tomatoes if desired. Cut the chives into small rolls. Place the green spelt in a bowl with any remaining liquid, add the vinegar and herb salt, chili flakes, sugar, and pepper. Mix thoroughly and let stand for about 15 minutes. Then add the tomatoes, chives, and olive oil, and mix everything gently.
