Ingredients for 1 servings:
- 1 small cucumber(s) , or 1/2 cucumber
- 1 tbsp peanut butter
- 3 tbsp apple cider vinegar
- Maple syrup, very little
- 1 tbsp mustard, hot
- 1 shot of water, hot, plenty
- 1 clove(s) garlic
- chili flakes, and
- herbal salt
- Pepper, freshly ground
- 10 peanuts, roasted with shell
Instructions
Working time approx. 10 minutes; Rest time approx. 15 minutes; Total time approx. 25 minutes
with peanut dressing and peanuts
Thoroughly mix the peanut butter, mustard, water, vinegar, and maple syrup with the hot water. Peel the garlic and press it through a press, stir it into the dressing, and season generously with chili flakes, pepper, and a pinch of herb salt. Peel the peanuts, remove the brown skins, and chop into smaller pieces. Wash the cucumber and slice it (I used a serrated slicer). I didn’t peel the cucumber. Thoroughly mix the cucumber slices with the dressing and let it rest for about 15 minutes. Finally, sprinkle with the chopped peanuts.
