Crunchy – hearty temptation with bitchy sweets

Ingredients for 4 servings:

  • 3 small leaf lettuce, various, beautifully colorful
  • 50 g cheese (mild goat cheese)
  • 1 bag of dried apricots
  • 50g bacon
  • 3 tbsp balsamic vinegar, good quality
  • 6 tbsp oil (pumpkin seed oil)
  • 2 bars of dark chocolate, min. 70% cocoa
  • salt and pepper
  • 1 handful of pumpkin seeds
  • some honey

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Salad variation

Trim and tear the lettuce into small pieces. Slice the apricots lengthwise and fill each of the resulting pockets with a slice of goat cheese. Wrap the whole thing in bacon and fry in a pan. For the dressing, mix the balsamic vinegar with melted dark chocolate, add the oil, and season to taste. The honey is important, as the chocolate can be too bitter. Serve everything. The apricots should still be warm. Sprinkle with pumpkin seeds and serve.
