Cucumber and mint salad

Ingredients for 3 servings:

  • 500 g cucumber(s)
  • 1 large onion(s), red
  • 4 sprigs peppermint
  • 100 g feta cheese
  • 150 g cream yogurt
  • 1 clove(s) garlic
  • olive oil
  • lemon juice
  • salt and pepper

Working time approx. 15 minutes; Rest time approx. 10 minutes; Total time approx. 25 minutes

Cut the cucumber into very thin slices, lightly salt it in a colander, and let it soak for 10 minutes. Also cut the red onion into very thin strips, and pick and chop the peppermint. Combine everything with the drained cucumber in a bowl and mix. Blend 3/4 of the feta with the yogurt, garlic, and 1 tablespoon of olive oil. Mix the dressing into the salad and season with salt, pepper, and lemon juice. Crumble the remaining feta over the finished salad.
