Cucumber and papaya salad in lime and yogurt dressing

Ingredients for 2 servings:

  • ½ papaya
  • ½ cucumber(s)
  • possibly mint
  • 2 tbsp lime juice
  • 1 tbsp vinegar
  • 2 tbsp yogurt
  • 1 tbsp sour cream
  • e.g. salt and pepper
  • n. B. mint, chopped or other herbs n. B.

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel the papaya, halve it, remove the seeds, and finely dice it. Peel and finely dice the cucumber. If you don’t like cucumber seeds, you can also remove the seeds. Wash the mint and tear it into leaves, if desired. Mix the dressing together and season to taste. Combine the papaya, cucumber, and dressing and serve garnished with mint, if desired.
