Cucumber and pepper salad

Ingredients for 3 servings:

  • 1 cucumber(s)
  • 1 red bell pepper(s)
  • ½ onion(s)
  • 1 spring onion(s)
  • 1 ½ tbsp fruit vinegar
  • 3 tbsp cream
  • 1 tbsp olive oil
  • 1 tbsp honey
  • 1 tsp soy sauce
  • Salt
  • Pepper (herb pepper)
  • some basil, if desired

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Total time approx. 45 minutes

with honey cream dressing

Peel the cucumber and slice thinly. Place the slices in a sieve and add a little salt to draw out the water. Halve the bell pepper, remove the seeds, peel, and finely dice. Finely dice the onion. Cut the spring onion into thin rolls. Mix the diced onion and spring onions well with all the ingredients for the salad dressing. Transfer to a bowl, add the diced bell pepper, and let stand for a while. Just before serving, squeeze the cucumber slices a little more liquid with your hand and add to the dressing. Mix carefully. If you like, you can add a few strips of fresh basil on top at the end.
