Cucumber bites with avocado cream, shrimp and gari

Ingredients for 20 servings:

  • 1 cucumber(s), organic
  • 1 avocado(s)
  • 1 tsp lime juice
  • 1 pinch of wasabi paste
  • salt and pepper
  • 20 shrimp(s), cooked
  • 1 tbsp ginger (gari), thinly sliced
  • some coriander leaves

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash the cucumber, dry it, and remove the stem and flower tips. Peel it thinly, cut into thick slices, and season with salt and pepper. Halve the avocado, remove the stone, scoop out the flesh, and drizzle with lime juice. Mash the flesh with a fork. Season the mixture with wasabi, salt, pepper, and additional lime juice, if desired. Spread the avocado cream on the cucumber slices and place a prawn, a slice of gari, and a coriander leaf on top.
