Cucumber casserole

Ingredients for 4 servings:

  • 4 cucumber(s) (stewed cucumbers), or salad cucumbers
  • 4 slice(s) ham, cooked
  • 4 onions
  • 4 tbsp butter or margarine
  • ⅛ liter meat broth
  • 8 tbsp cream
  • 4 eggs, hard-boiled
  • 4 tbsp dill, chopped
  • 2 tbsp lemon juice
  • Sugar
  • salt and pepper
  • Garlic
  • 4 potatoes

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the cucumbers and halve them lengthwise. Scrape out the seeds and slice the halves. Peel and dice the potatoes. Peel and roughly chop the onions and garlic. Cut the ham into strips. Chop the eggs. Melt the butter and sauté the onions and garlic until translucent. Add the ham strips and fry briefly. Mix in the cucumbers and potatoes, then add the meat broth and cream. Season the casserole dish, cover, and simmer over low heat for about 8 minutes. Season again with sugar, salt, and pepper, if desired. Sprinkle with the chopped eggs and dill, and serve immediately.
