Cucumber cold soup with smoked salmon

Ingredients for 4 servings:

  • 1 large cucumber(s)
  • 200 ml sour cream
  • 50 ml crème fraîche
  • 400 ml vegetable stock, cold
  • 2 tbsp dill
  • 150 g smoked salmon
  • some salt
  • some cayenne pepper
  • some garlic
  • some ice (crushed ice)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel, halve, and deseed the cucumber. Cut into small pieces and blend with sour cream, crème fraîche, vegetable stock, ice, and spices. Finally, fold in the dill. Cut the smoked salmon into strips and add to the soup. Serve in chilled bowls. If you don’t have crushed ice, simply refrigerate the soup for a while. Instead of smoked salmon, you can also use shrimp or king prawns.
