Semolina dish with blueberries

Ingredients for 2 servings:

  • 1 liter of milk
  • 90 g semolina (soft wheat)
  • 7 tbsp sugar
  • 2 eggs, separated
  • 1 pinch of salt
  • 200 g blueberries

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

In a small bowl, combine the semolina, sugar, salt, and egg yolks in that order. Whisk the egg whites until stiff peaks form. Microwave the blueberries until glossy and starting to release their juices, at 950 watts, for about 2 minutes. Microwave the milk until almost boiling; this saves time and stirring. Pour the milk into a saucepan, add the contents of the small bowl, and stir quickly at first to ensure everything is evenly mixed. Bring to a boil, simmer for one minute while stirring, then remove from the heat. Add a little of the beaten egg whites and mix, then fold this into the beaten egg whites. Then add the blueberries, mixing very sparingly; do not overmix. This makes two 0.7-liter portions of my nightly treat, which sweetens long evenings in front of the TV and leaves me feeling wonderfully full and satisfied. It tastes best after waiting a day, not too cold.
