Ingredients for 4 servings:
- 1 kg cucumber(s) (approx. 2 pieces)
- 1 bell pepper(s), red
- 1 bell pepper(s), yellow
- 1 bell pepper(s), green
- 1 large onion(s)
- 3 tbsp oil
- 350 ml vegetable stock
- Paprika powder, sweet
- 2 tbsp tomato paste
- 1 cup sour cream
- Salt
- pepper
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Wash and dice the cucumbers thoroughly. Deseed and wash the bell peppers, and slice them into strips. Peel and finely chop the onion. Heat the oil and sauté the onion. Add the diced cucumber and strips of bell pepper and pour in the vegetable stock. Season with paprika, tomato paste, salt, and pepper. Sauté until slightly tender, then finish with sour cream. This goes very well with potatoes.
