Cucumber Relish from America

- 800 g Cucumbers
- 300 g Onions white
- 1 Garlic cloves chopped
- 1 Red chilli pepper without seeds
- 200 g Sugar brown raw sugar
- 250 ml White balsamic vinegar
- 2 tsp Coated mustard powder
- 1 pinch Sea salt fine
- 2 tbsp Chopped dill
- Peel the cucumber, cut in half lengthways, remove the seeds and cut into small cubes.
- Peel the onions, garlic, halve the chilli peppers, remove the stalk and also cut everything into cubes.
- Put the diced cucumbers in a saucepan with the sugar, vinegar, mustard powder (I used mustard seeds) and salt. Bring to the boil while stirring.
- Reduce the heat and simmer for about 40 minutes.
- Stir in the finely chopped dill for the last 2-3 minutes.
- Season again to taste and pour into the prepared glasses.
- Close with the preserving ring, glass lid and masonry clamps.
- Boil in a 90 ° C water bath for 30 minutes.
- This relish tastes very good with grilled meat or homemade hamburgers.
