Cucumber Relish

The perfect cucumber relish recipe with a picture and simple step-by-step instructions.

  • 1 kg Cucumber, peeled and pitted
  • 250 g Onion
  • 250 ml White wine vinegar
  • 300 g Sugar
  • 3 tbsp Mustard seeds
  • 2 tsp Salt
  • 1 tsp Pepper from the grinder
  • 1 tsp Chopped dill
  1. Peel the onions. Peel the cucumber, cut in half lengthways and core. Weigh 1 kg. Cut the onions and cucumber into very small cubes.
  2. Mix the onions, cucumber, vinegar, sugar, mustard seeds and salt in a large saucepan. Season with 1 teaspoon of pepper. Bring to the boil and simmer over high heat for about 12 minutes.
  3. In the meantime, wash the dill, shake it dry, pluck off the flags and cut finely. Add about 3 minutes before the end of the cooking time and cook with it. Immediately pour the relish into clean twist-off jars, close and allow to cool. Store in a cool place.
