Cucumber Relish
The perfect cucumber relish recipe with a picture and simple step-by-step instructions.
- 1 kg Cucumber, peeled and pitted
- 250 g Onion
- 250 ml White wine vinegar
- 300 g Sugar
- 3 tbsp Mustard seeds
- 2 tsp Salt
- 1 tsp Pepper from the grinder
- 1 tsp Chopped dill
- Peel the onions. Peel the cucumber, cut in half lengthways and core. Weigh 1 kg. Cut the onions and cucumber into very small cubes.
- Mix the onions, cucumber, vinegar, sugar, mustard seeds and salt in a large saucepan. Season with 1 teaspoon of pepper. Bring to the boil and simmer over high heat for about 12 minutes.
- In the meantime, wash the dill, shake it dry, pluck off the flags and cut finely. Add about 3 minutes before the end of the cooking time and cook with it. Immediately pour the relish into clean twist-off jars, close and allow to cool. Store in a cool place.
