Cucumber salad with pomegranate

Ingredients for 2 servings:

  • 1 snake cucumber(s)
  • 1 pomegranate, seeds
  • 1 onion(s), white or red
  • 1 sprig of mint
  • 3 tbsp lemon juice
  • salt and pepper
  • 2 tbsp yogurt or olive oil

Peel the cucumber, quarter it, and remove the seeds. Peel and quarter the onion. Slice the cucumber and onion. Wash the mint, shake it dry, pick off the leaves, and finely chop. Mix everything in a bowl with the pomegranate seeds. Season with lemon juice, salt, and pepper. If desired, finish with yogurt or olive oil. Let it sit for 1 hour and enjoy with fish (e.g., tuna steak), grilled meat, or at a party buffet.
