Carrot salad with orange vinaigrette

Ingredients for 4 servings:

  • 6 large carrots
  • 1 medium-sized onion(s), half grated, half diced
  • possibly parsley, fresh
  • 1 orange(s)
  • 3 tbsp oil
  • 1 tbsp white wine vinegar
  • 1 pinch(s) of sugar
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Squeeze the orange and combine the juice with oil, vinegar, sugar, salt, and pepper to make a vinaigrette. Finely grate the carrots and mix with the onion and the vinaigrette. Garnish with some fresh parsley, if desired.
