Cucumber salad with strawberries

Ingredients for 4 servings:

  • 2 cucumber(s)
  • 150 g strawberries
  • 80 g peas
  • 1 organic lemon(s)
  • salt and pepper
  • 200 g feta cheese
  • 1 handful of pistachios, roasted, salted
  • 6 sprigs basil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash the cucumbers and cut one into slices and the other into sticks. Wash, hull, and chop the strawberries, then add them to the cucumbers along with the peas. Squeeze the lemon and grate the zest. Mix the oil, lemon juice and zest together with a little salt and pepper to make a dressing and add to the salad. Crumble the feta over the top, peel the pistachios, and add them. Serve garnished with fresh basil. Serve with baguette.
