Curd and coconut cakes

Ingredients for 1 servings:

  • 80 g butter
  • 30 g sugar
  • 2 eggs
  • 30 g desiccated coconut
  • 50 g flour
  • 250 g quark (cottage cheese)
  • 1 pinch of salt
  • 1 tbsp lemon juice
  • 1 banana(s)
  • Clarified butter, for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Cream soft butter with sugar and eggs until creamy. Stir in flour, curd cheese, salt, coconut flakes, and lemon zest. Finally, mash the banana and add it. Heat clarified butter in a non-stick pan, add a heaped tablespoon of batter and flatten slightly. Reduce heat immediately and fry until golden brown. Sprinkle with powdered sugar and serve with compote or fruit sauce.
