Ingredients for 6 servings:

  • 100 g flour
  • 250 ml milk
  • 120 g sugar
  • Salt
  • 5 eggs
  • 750 g quark (low-fat quark)
  • 2 eggs, including the yolk
  • 1 lemon(s), grated peel
  • 60 g butter or margarine
  • 200 g crème fraîche
  • 50 g powdered sugar
  • Fat for the mold

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Mix flour, milk, 50g sugar, a pinch of salt, and 4 eggs into a thin batter. Squeeze out the quark well, then mix with the remaining sugar, egg yolk, and lemon zest. Melt 10g butter or margarine in a pan, add 6 tablespoons of batter, and bake for about 2 minutes on each side. Bake the remaining 5 pancakes in the same way. Spread the quark on the pancakes, roll them up, and place them in a greased dish. Mix the crème fraîche with the powdered sugar and the remaining egg and pour over the pancakes. Bake in a preheated oven on the middle rack at approximately 200°C for 15 to 20 minutes.
