Ingredients for 1 servings:

  • 150 g powdered sugar
  • 3 egg yolks
  • 50 g butter
  • ¼ liter of milk
  • 1 packet of vanilla sugar
  • 3 tbsp water
  • 250 g flour
  • 1 packet of baking powder
  • 3 egg whites
  • 200 g sugar, fine
  • 1 packet of vanilla sugar
  • 300 g currants (red currants),
  • Grease for the tray
  • Flour for the baking sheet

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Wash, trim, and sort the currants. For the batter, combine all ingredients in a bowl and spread onto a greased, floured baking sheet. Bake in a preheated oven at 170°C (convection oven) for about 15 minutes (do not allow to fully bake). For the topping, beat the egg whites until stiff peaks form. Slowly add the caster sugar and vanilla sugar, whisking until fully combined. Fold in the currants and spread the topping onto the lightly baked batter. Bake for another 5 to 10 minutes.
