Curry chicken with pineapple

Ingredients for 4 servings:

  • 500 g chicken
  • 1 can pineapple (chunks, unsweetened)
  • 2 onions
  • 2 cloves garlic
  • 250 ml whipped cream / soy cream
  • Salt
  • pepper
  • curry
  • Oil (sesame oil)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the chicken fillet into 1 x 1 cm pieces. Heat the curry in a wok (until it starts to smell), add sesame oil, and sear the meat until crisp. Remove the meat from the wok, sear the onion, add the meat back, and deglaze with the pineapple juice. Add the heavy cream, bring to a boil, and add the pineapple. Simmer on low heat until the pineapple is hot. Serve with rice or noodles. Pineapple can also be substituted with peach.
