Curry chicken with whole wheat spaghetti

Ingredients for 4 servings:

  • 250 g chicken breast
  • 2 stalk(s) leeks
  • 2 large carrots
  • 1 jar mushrooms
  • 500 g spaghetti (wholemeal)
  • 500 ml broth
  • 100 ml coconut milk, or milk
  • possibly curry paste, red
  • Salt
  • pepper
  • curry powder

Instructions

Cook the spaghetti as usual. Dice the chicken breast and fry in a non-stick pan. Season with salt, pepper, and curry powder and remove from the pan. Add the sliced ​​leek, the sliced ​​carrots, and the mushrooms to the pan and fry briefly. Add the broth and milk to the vegetables and stir in a little curry paste, if desired. Return the meat to the pan and simmer for about 10 minutes. Then season to taste. Serve the cooked spaghetti with the sauce.
