Ingredients for 4 servings:
- 250 g chicken breast
- 2 stalk(s) leeks
- 2 large carrots
- 1 jar mushrooms
- 500 g spaghetti (wholemeal)
- 500 ml broth
- 100 ml coconut milk, or milk
- possibly curry paste, red
- Salt
- pepper
- curry powder
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Cook the spaghetti as usual. Dice the chicken breast and fry in a non-stick pan. Season with salt, pepper, and curry powder and remove from the pan. Add the sliced leek, the sliced carrots, and the mushrooms to the pan and fry briefly. Add the broth and milk to the vegetables and stir in a little curry paste, if desired. Return the meat to the pan and simmer for about 10 minutes. Then season to taste. Serve the cooked spaghetti with the sauce.
