Curry eggs with ham

Ingredients for 2 servings:

  • 4 eggs, hard-boiled
  • 6 slices of cooked ham
  • 3 tbsp sherry
  • 250 ml sweet cream
  • 2 tbsp tomato paste
  • 1 tsp curry powder
  • salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Drizzle the ham slices with sherry. Peel and quarter the eggs. Arrange the ham and eggs in a greased casserole dish. Mix the cream with tomato paste and curry powder, season with salt and pepper, and pour over the ham. Bake at 220°C for 12-15 minutes, until the sauce begins to brown. Serve with rice or toast.
