Ingredients for 2 servings:

  • 500 g potatoes
  • 1 onion(s)
  • 1 clove(s) garlic
  • ⅛ liter broth
  • 250 ml coconut cream (1 tetra pack from the Asian store)
  • 1 tbsp curry
  • 50 g almond(s), sliced
  • 2 tbsp oil (peanut oil)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Sauté the chopped onion, chopped garlic, and raw, peeled, and diced potatoes in the oil. Add the broth and coconut cream, stir in the curry, and simmer until tender (approx. 15 minutes). Serve as a side dish or with rice as a main course. The curried potatoes can also be served with peas or green beans (not canned!). Sprinkle with almonds before serving.
