Ingredients for 1 servings:

  • 1 large onion(s)
  • some olive oil
  • 150 g tomato paste
  • 300 ml cola
  • 100 ml apple cider
  • 250 g mango puree
  • 100 g applesauce
  • 250 ml mango juice
  • 2 can/n tomatoes, peeled or pureed
  • 100 ml orange juice
  • salt and pepper
  • Sugar
  • curry powder

Working time approx. 20 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 10 minutes

Finely dice the large onion and fry in a little olive oil until dark brown. Add the tomato paste and sweat. Deglaze with 200 ml of cola and the apple cider and reduce until the sauce has thickened. Then pass it through a sieve into another pot. Mango puree (you may need to puree canned or fresh mangoes yourself), add apple sauce and mango juice, and simmer everything. Pass the peeled tomatoes through a sieve or puree them directly and add them. Season to taste with sugar, salt, and pepper. Season with a good curry mix and a little more salt. It should be more strongly seasoned now than it will be in the end. Top up with orange juice and the remaining cola and simmer for about 45 minutes. If the consistency isn’t quite right, add a little tomato paste and simmer for another 5 minutes. It should now be tasty. For more spice, add a little sambal oelek. But be careful, the sauce only tastes best once it’s cooled and reheated. It’s actually best to cook the sauce the day before.
