Ingredients for 4 servings:

  • 1 large can of peach(s)
  • 6 tsp curry (Indian)
  • 1 cup sour cream
  • ½ cup cream
  • 1 pinch of salt
  • 1 pinch(s) pepper, white
  • ½ red bell pepper(s)

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Blend the entire contents of the can of peaches in a blender (or with a hand blender). Dice the bell peppers (you can leave them out if you like; they’re just for color relief). Add curry powder to taste. Stir in the cream and sour cream, and season with salt and pepper. It’s best to let everything sit in the refrigerator for 1-2 hours, so the curry really develops its flavor. The sauce can be served warm or cold. If you like, you can also stir in some peach pieces (for a more appealing look).
