Cypriot cheese bread

Ingredients for 1 servings:

  • 650 g flour
  • 2 onions
  • 400 g cheese (any kind)
  • 2 cubes of yeast, fresh, or 2 – 3 sachets of dry yeast
  • 1 tbsp salt
  • 375 ml water, lukewarm
  • possibly olive oil

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Weigh and measure all ingredients. Finely dice the onions, leave them raw or lightly roast them in olive oil, if you like. Dice the cheese. Knead everything together and let it rise until it has doubled in size. You can then form a round loaf and place it on a baking sheet, or use a 30 cm x 10 cm x 8 cm loaf pan. Bake for about 30 minutes at 200 degrees Celsius for the round loaf, and 50-60 minutes for the loaf pan. This cheese bread goes very well with a barbecue. Tip: I used Maasdam cheese; it’s very flavorful.
