- some olive oil

- some oregano, possibly other herbs
- 5 olives

a delicious Cretan dish
Dakos is a Cretan specialty made from farmer’s rusks, tomatoes, and mithitra, a cheese from Crete. Since this cheese is only available on Crete, I use regular goat cheese. Sprinkle a little oil on the slice of bread and bake it in the oven until crisp. Then, soak the bread again (really just a little) in oil. If desired, spread a little tomato paste on the bread. Then cut the tomatoes into very small cubes and spread them on top. Crumble the goat cheese into tiny pieces and sprinkle them over the tomatoes. Place the olives on top and drizzle with a little more oil. Sprinkle with the herbs and serve. It doesn’t taste quite as good as the original Dakos from Crete, but it’s still very good.
