Date and almond clouds

Ingredients for 1 servings:

  • 250 g dates
  • 4 egg whites
  • 200 g powdered sugar
  • ½ tsp cinnamon
  • 2 tbsp rum
  • 60 g cornstarch
  • 100 g almonds, ground, chopped or sliced, as desired
  • 60 baking wafers, round (40 mm Ø)
  • 100 g dark chocolate

Instructions

Working time approx. 1 hour; Rest time approx. 1 hour; Cooking/baking time approx. 10 minutes; Total time approx. 2 hours 10 minutes

Preheat the oven to 120°C fan/convection oven. Line baking sheets with baking paper. Pit the dates and dice them finely. Beat the egg whites until stiff, while sifting in the powdered sugar and cinnamon. Mix the rum, cornstarch, dates, and almonds and fold into the beaten egg whites. Distribute the wafers on the baking sheets. Pour the mixture into a freezer bag, snip off a corner, and pipe the mixture evenly onto the wafers. Bake one at a time in the hot oven for 10 minutes. Let cool. Break the chocolate into a bowl and then melt it in the microwave at 600 watts for about 2 minutes. Spread the melted chocolate in stripes on the clouds using a teaspoon. Let dry. Makes 60 wafers.
