Ingredients for 1 servings:

  • 1 tsp lemon(s), organic, grated peel
  • 175 g almonds, peeled and ground
  • 150 g powdered sugar
  • 100 g pine nuts
  • 2 egg whites
  • 1 pinch of salt
  • 1 tsp lemon juice
  • Powdered sugar, for dusting

Preheat the oven to 160°C. Combine the lemon zest with the almonds, powdered sugar, and pine nuts. Beat the egg whites with the salt until frothy. Then add the lemon juice. Using a spatula, fold the almond and pine nut mixture into the beaten egg whites. Using 2 teaspoons, place small heaps onto a baking sheet lined with parchment paper, keeping a space between each one, as they will spread slightly. Bake on the middle rack for about 14 minutes, then dust with powdered sugar. This yields 60-80 cookies, depending on the size.
