Ingredients for 1 servings:

  • 200 g flour (wheat flour 405)
  • 100 g sugar
  • 150 g butter, soft or margarine
  • 1 pinch of baking powder
  • 1 tbsp vanilla sugar
  • 1 pinch of salt
  • 200 g date(s), dried

Sift flour and baking powder into a bowl. Pit the dates and sort out about 16-20 depending on their size. Finely chop the remaining dates (you can use an electric mill, food processor or hand blender). Add the date mixture and the remaining ingredients to the flour and mix with an electric hand mixer (fitted with a dough hook) to form a dough, first on low speed and then after one minute on high. Cover the sorted dates with the dough and place on a baking tray lined with baking paper. Place on the middle rack of a preheated oven. Top/bottom heat: 180°C Fan: 160°C Gas mark 2-3 Baking time: 11-12 minutes Then pull the cookies, still on the baking paper, out onto a wire rack and leave to cool.
