Ingredients for 1 servings:
- 500 g wheat flour, type 550
- 200 g wheat flour, type 1050
- 1 pinch of salt
- 100 g sugar
- 50 g butter, soft
- 1 cube of yeast
- 100 g dark chocolate, coarsely chopped
- 200 g milk, cold
- 200 g water, hot
- some condensed milk, for brushing
Instructions
Working time approx. 15 minutes; Rest time approx. 1 hour 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 2 hours 5 minutes
Place the first 6 ingredients in a bowl and mix. Mix the cold milk with the hot water and add it to the lukewarm flour mixture. Knead everything for 5 minutes using the spiral mixer on speed 1 until you have a smooth dough. Add the chocolate one minute before the end of the kneading time. Cover the dough and let it rest for 10 minutes. Knead again and form it into a tight ball. Place it end-down on a baking tray lined with baking paper and let it rise, covered, for 1 hour. Brush with the condensed milk and bake in the oven at 200°C (top/bottom heat) for 20 minutes. Reduce the heat to 180°C (350°F) and bake for a further 20 minutes.
