Ingredients for 4 servings:
- 4 large potatoes
- 2 cups of cream
- 1 bunch of spring onions
- 1 pack of bacon
- n. B. Cheese (Gouda or Butterkäse), grated
- salt and pepper
- some garlic
- possibly nutmeg
Instructions

Bring the potatoes to a boil in water as usual and cook until tender. (They shouldn’t fall apart; they should still be firm.) In the meantime, finely chop the spring onions and sear the bacon until crispy. Once the potatoes are ready, let them cool slightly and cut each one in half. Then scoop out the insides with a spoon, leaving only a small edge. Place the potato innards in a bowl and mix with the spring onions, the finely crumbled bacon, and the cream, then fold in some of the grated cheese. Season with pepper, salt, garlic if desired, and a pinch of nutmeg. Then stuff everything back into the potato skins. A small mountain should form. Sprinkle the cheese over the top and cook over medium heat until golden brown. Delicious with grilled dishes such as steaks, etc.
