Ingredients for 4 servings:
- 6 large potatoes, longish
- ½ tsp caraway seeds
- salt and pepper
- 300g mozzarella
- 3 tomatoes
- ½ bunch basil
- 6 slices of Parma ham, thinly sliced
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Wash the potatoes thoroughly and boil in a pot of water with caraway seeds and 2-3 tablespoons of salt for about 25 minutes. In the meantime, drain the mozzarella and slice it. Wash the tomatoes, cut out the stems and slice them. Wash the basil, shake it dry, pick off the leaves and cut half into strips. Preheat the oven to 220°C (200°C fan oven). Drain the potatoes, halve them lengthwise and wrap each one in aluminum foil so that the cut side is exposed. Then place it on a baking tray. Season the halved potatoes with salt and pepper and top with basil strips, Parma ham, tomato slices and mozzarella slices. Bake in the oven for about 10 minutes. Garnish with basil leaves.
