Delicious omelet with zucchini

Ingredients for 2 servings:

  • 1 large vine tomato(s), diced
  • 2 large eggs
  • 2 small zucchini, diced
  • some olive oil
  • some salt and pepper

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Pour plenty of oil into a pan, add the zucchini, and fry over medium heat. After about 6-8 minutes, add the tomatoes and season with salt and pepper. Once the tomatoes are mushy, add two beaten raw eggs and continue to sizzle in the pan. Once the eggs are set, serve. 200 kcal per serving.
