Delicious Portuguese bean soup

Ingredients for 8 servings:

  • 2 large potatoes
  • ½ kg carrot(s)
  • 1 stalk(s) celery
  • 1 zucchini
  • 1 onion(s)
  • 1 garlic clove(s)
  • 1 cube of vegetable stock, instant
  • 300 g beans (runner beans)
  • 1 handful of rice
  • 1 tbsp olive oil
  • Sea salt
  • 3 liters of water

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 15 minutes

green bean soup my way

Cook all ingredients (except the green beans and rice) in a large saucepan. Puree the vegetables using a hand blender. Trim the green beans, halve them, and cut them into 3 cm pieces. Finally, add the beans to the broth with the rice and olive oil and cook for about 20 minutes more, until the beans are crisp and tender.
