Ingredients for 1 servings:

  • 250 g wholemeal spelt flour
  • 80 g tiger nut flour
  • 1 tbsp inulin
  • 1 tbsp lecithin
  • 2 tsp baking powder
  • ½ tsp salt
  • 30 g sugar
  • 100 ml sunflower oil
  • 250 ml coconut rice drink
  • possibly mineral water
  • 1 tbsp, heaped almond butter
  • ½ banana(s)

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 5 minutes

Combine the dry ingredients. Then add all the wet ingredients. If the batter is too stiff, add a little more mineral water. Finally, add the banana and almond butter. I blended everything with a hand blender, so half a banana was quite easy to work with. Let it rest for about half an hour and then bake in batches. This version is quite low in sugar and might not be sweet enough for those with a sweet tooth. If you like, you can increase the sugar to 60g. Keep in mind that the banana and tiger nuts also add sweetness.
