Original recipe from grandma
First, make a yeast dough from the listed ingredients. Let the dough rise for 30 minutes. Then knead it well, roll it out on a baking sheet, and let it rise again for 20-30 minutes. While the dough is rising, peel and finely dice the onions and finely dice the bacon. Lightly fry the onions, preferably in batches. Remove from the pan and fry the bacon until translucent. Drain off the rendered fat. Let the onions and bacon cool slightly. Mix the quark with the remaining ingredients, add the slightly cooled onions and bacon, mix everything well, and spread it on the dough. Bake in a preheated oven at 180°C (top/bottom heat) for about 30 minutes until golden brown. The bacon pie tastes best when eaten warm. It can be made well in advance.
