Ingredients for 1 servings:
- 450 g flour
- 220 ml water
- 50 g butter, soft
- 1 packet of dry yeast
- 1 pinch of salt
- 1 pinch(s) of sugar
- Flour for the work surface
- 800 g onion(s)
- 200 g bacon
- 1 tbsp oil
- 1 tbsp butter
- 3 eggs
- 200 ml cream
- 250 g cheese
- salt and pepper
- nutmeg
Instructions
Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 30 minutes
Put the flour, yeast, sugar, and salt in a bowl. Make a well in the center and add the cold water. Add the softened butter and knead everything into a dough. Let the dough rest for about 30 minutes. Then, roll it out on a floured work surface the size of a baking sheet. Place it on the baking sheet and press the edges up. For the topping, whisk the eggs and cream with a hand blender and season with salt, nutmeg, and pepper. Peel the onions, halve them, and cut them into strips. Finely chop the bacon. Brown both in a pan with the butter and oil. Remove the pan from the heat, add the egg mixture, and stir in. Season to taste and adjust the seasoning if necessary. Place the topping on the dough, sprinkle with cheese, and bake in a preheated oven at 200°C (top/bottom heat) for about 30 minutes. Serve with a Federweißer (a white wine) or a well-chilled white wine.
