Ingredients for 6 servings:

  • 6 tomatoes
  • some salt and pepper
  • e.g. cayenne pepper
  • 3 tbsp breadcrumbs, weckmehl or breadcrumbs
  • 1 tbsp butter
  • 3 tbsp butter
  • 1 tsp mustard
  • 1 dashes Tabasco
  • 3 tsp Worcestershire sauce
  • 1 tsp, heaped sugar
  • 2 tbsp vinegar
  • 1 egg yolk

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

baked, devilishly hot tomatoes

Halve the tomatoes, place cut-side up in a baking dish, season with salt, pepper, and sprinkle with cayenne pepper. Combine the flour with 1 tablespoon of butter and spread over the tomato halves. Melt the remaining butter in a small saucepan, add the mustard, Tabasco, Worcestershire sauce, sugar, vinegar, and a pinch of salt, and heat. Beat the egg yolks and add a little of the hot vinegar mixture, then pour into the saucepan with the vinegar mixture and heat, stirring constantly, until the sauce thickens. Bake the tomatoes under the broiler until the crumbs are browned. Spoon a spoonful of sauce onto each tomato half and serve.
