Ingredients for 4 servings:
- 200 g bacon, diced
- 3 onions, diced
- 5 garlic cloves, finely sliced
- 1 tbsp vegetable broth, granulated
- 2 tbsp sugar
- 1 tsp sambal oelek or harrisa (a little less)
- n. B. Salt and pepper, from the mill
- 1 cup of sweet cream, or more delicious: Cremefine
- 1 tube(s) Tomato paste, 3-fold concentrated
- ½ tsp sweet paprika powder
- 500 g pasta, preferably spaghetti
- 2 tbsp oil
- 1 tsp butter
- 3 tbsp salt, for the pasta water
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes
quick and tasty.
Preheat a medium saucepan, add the oil and heat until hot, then add the onions and bacon. Fry until just browned, then add the garlic and cook briefly. Prepare half a liter of water. Stir in the sugar, tomato paste, sambal oelek (or harrissa), and paprika, and toast lightly (this is important for the flavor). Deglaze with a little water, enough to make a thick paste. Stir in the stock powder, season well with pepper, and salt if desired. Reduce slightly, then stir in the cream. Season again with pepper, salt, and stock powder, and simmer gently over a very low heat. Only now cook the noodles according to the package instructions, as the sauce needs to infuse. Sweet and sour endive salad goes well with it.
