What is the difference between brown and white eggs?

Basically, there is no difference between brown and white eggs. Brown eggs often have a slightly thicker shell than white eggs. Therefore, they break less quickly during transport or cooking. But the content doesn’t change.

The color of the eggs depends on the breed of chickens. It is less the plumage than the color of the earlobe that gives an indication of the color of the eggs. If these are white, the hen usually lays white eggs; if they are brown, the hen usually lays brown eggs. However, a clear statement can only be made by examining the genetic material.

The complete formation of an egg takes about 24 hours. The pigmentation of the shell occurs only one to two hours before the eggs are laid and is only on the outer surface. The inside of eggs is always white.

Around 70 percent of eggs sold in retail are brown eggs because they are preferred by most consumers.
