- 20 g Butter
- 20 g Flour
- 100 ml White wine dry
- 100 ml Good meat broth
- 50 ml Cream
- 2 Pinches Salt
- 1 bunch Fresh dill
- 1 tablespoon Freshly squeezed lemon juice
- Preliminary work: pluck the delicate dill flags from the branches – discard the branches, put a few nice flags aside for garnish and cut the rest of the flags as finely as possible.
- Preparation 2: Sweat the butter with the flour for a few minutes while stirring, deglaze with the wine and meat stock, add salt and simmer the sauce gently for about 7 minutes, then refine with cream and the freshly cut dill.
- Season the sauce with lemon juice and serve with mixed vegetables with fried fish fingers.
- This fine sauce tastes good with all fish dishes, but also with boiled or lost eggs – and served with colorful vegetables, it is a real “eye-catcher”!
