Ingredients for 3 servings:
- ½ onion(s)
- 1 clove(s) garlic
- 2 tbsp butter
- 300 g long grain rice
- 1 can tomatoes, chopped, approx. 400 g
- 2 tbsp vegetable stock powder
- 3 tbsp ajvar
- 500 ml water
- salt and pepper
- Paprika powder, sweet
- ½ bell pepper(s), red
- 150 g peas from the can
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes
Finely chop the onion, mince the garlic clove, and sauté both in the butter. Add the rice, chopped tomatoes, vegetable stock, ajvar, and water, and season generously with the spices. Dice the bell pepper and add it. Simmer on low heat for about 25 minutes, until the rice is tender. Finally, stir in the drained peas and let them warm through.
