Ingredients for 4 servings:

  • 250 g long grain rice
  • 1 tbsp, heaped butter
  • 1 small onion(s)
  • 1 small bell pepper(s), red
  • 1 tsp, heaped vegetable broth, instant
  • 1 cup of hot water (large cup)
  • 2 tsp, heaped Ajvar, hot
  • 1 tsp tomato paste
  • 1 small can of peas, approx. 300 g, drained
  • some paprika powder
  • some curry powder

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Finely chop the onion and sauté in butter. Peel and finely chop the bell peppers, and add them. Add the rice. Stir the vegetable stock, ajvar, and tomato paste into a large cup of hot water and then pour into the pot. Let everything simmer. Add more water if necessary. Just before the rice is done and still fluffy, stir in the peas. Season to taste with paprika and curry powder.
