Chestnuts with Brussels sprouts

Ingredients for 4 servings:

  • 1,000 g chestnut(s), weighed with shell
  • 250 ml vegetable broth, approx.
  • 3 tbsp clarified butter
  • 30 g powdered sugar, approx.
  • 1 package of Brussels sprouts (creamed Brussels sprouts), frozen

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 45 minutes

Cut the chestnuts crosswise and boil for about 10 minutes. Remove the skin and peel. Quarter the chestnuts and boil them in the broth for about 5-10 minutes. Then add them to a pan with the lard. Stir well until a sauce forms. Dust with powdered sugar to taste. Prepare the Brussels sprouts according to the package instructions and warm 180-200g of chestnuts in it. Fill the remaining chestnuts into cans in portions and freeze. If necessary, thaw and heat a package of creamed Brussels sprouts together with a portion of chestnuts.
