Fruit juices can naturally contain alcohol. This alcohol is created by the fermentation processes of yeast fungi that are on the fruit and in the air. Since the alcohol is naturally contained in the juices, it does not have to be declared. An alcohol content of three grams per liter of fruit juice is considered tolerable according to the guidelines for fruit juices. This corresponds to 0.38 percent alcohol by volume per liter of juice. There is a separate regulation for grape juice, which may have an alcohol content of no more than 1 percent by volume. If fruit juices are left open for a long time, the juice can continue to ferment due to yeasts in the air, resulting in a higher alcohol content. Therefore, already opened juices should be sealed and stored cool and protected from light.
