Ingredients for 1 servings:

  • 125 g honey
  • 35 g sugar
  • 25 g butter
  • 1 egg yolk
  • 40 g sugar, brown sugar, rock candy
  • 150 g flour
  • 1 tsp gingerbread spice
  • 1 tbsp cinnamon
  • 300 g jelly, red
  • possibly gelatin (additional)
  • chili powder
  • 200 g marzipan
  • Powdered sugar for kneading
  • 400 g dark chocolate coating
  • ½ cube of palm fat
  • Pepper, red peppercorns, for decoration
  • Chili pepper(s), chopped, for decoration

Instructions

Working time approx. 1 hour; Rest time approx. 12 hours; Total time approx. 13 hours

Heat the honey, sugar, and butter in a bain-marie. Fold in the egg yolks. Stir the flour, rock candy, and spices into the dough. Let it rest for 12 hours. Stir the jelly until soft, thicken with additional gelling agent if desired, and season with chili powder so that it burns slightly. Knead the marzipan with a little powdered sugar and roll it out. Roll out the dough on baking paper, approx. 20 x 30 cm. Place a baking frame around the outside or use a suitable baking pan. Pre-bake at 190°C (electric) for 5 minutes, remove from the oven, and reduce the oven to 150°C. Spread the jelly mixture over the dough sheet and bake for a further 15 minutes at 150°C. Remove from the oven and place the marzipan sheet on top. Once cooled, cut the sheet into cubes approx. 2 x 2 cm, then stack two pieces on top of each other. Dip into the chocolate coating melted with palm oil and decorate with red peppercorns and chopped chili peppers.
