Ingredients for 1 servings:

  • 125 g honey
  • 125 g powdered sugar
  • 100 g butter
  • 1 egg(s), weight class M
  • 50 g hazelnuts, roasted, medium coarse.
  • 250 g flour, type 405
  • 1 tbsp cocoa powder, unsat.
  • 2 pinches of gingerbread spice
  • 3 shots of cherry brandy (or juice)
  • 2 pinches of ammonium bicarbonate
  • 50 g marzipan
  • 100 g apricot jam
  • Cake icing, for coating

Instructions

Working time approx. 2 hours; Rest time approx. 1 hour; Cooking/baking time approx. 20 minutes; Total time approx. 3 hours 20 minutes

with honey, marzipan, hazelnuts

Preparation: ALWAYS dissolve the baking powder in liquid (cherry brandy or fruit juice). Mix the marzipan with the jam until smooth. Prepare the dough: Make a dough with all the ingredients. This will be soft and must therefore be refrigerated. Roll out the cold dough on baking paper into a rectangle approximately 36 x 28 cm. If possible, use a baking frame. Bake at 180 °C (top/bottom heat) for about 15-20 minutes. This varies slightly from oven to oven. But don’t overbake! Let the sheet cool on a rack, cut in half, and spread the apricot jam mixed with the marzipan on one half. Place the second sheet on top (so that the smooth base is facing up) and press down. The jam/marzipan ratio can be adjusted as desired. Cut the sheet into 2 x 3 or 3 x 3 cm cubes. Melt the cake icing in a water bath. Cover the dominoes and let them drain on a rack. Before the glaze sets, place it on a sheet of baking paper and let it dry. Tip: Remove from the rack in time!
